  • The Truth about the Color of Maine Lobsters

    Think that all lobsters coming from Maine are red?  Then time to think again !  The lobsters that come from Maine are actually greenish-brown or black, but they can also be blue, yellow, or even white.  About one in every 30 million lobsters is born with a blue shell.

    If a lobster's shell has black holes or marks on it; that is the result of wear and tear.  They indicate that the older lobster hasn't recently shed its shell.  The marks are not harmful.

    The color of the shell had no affect on the flavor or texture of the lobster.  When it is cooked, all of the color pigments are hidden, except the red one.  That's why when your lobster is completely cooked; it will be red in color.

    If you cook a lobster longer than needed, the meat will be tough.  When you cook it properly, it is creamy white in color.  The antennae are removed easily.

    Maine Lobsters can be boiled, grilled, steamed, and baked.  The white meat is located in the tail, claws, and the knuckles.  Meat is also found in parts of the body and the legs.  The red matter in the tail section is the roe, or female eggs and is considered a delicacy like caviar.  The green substance is located at the section of the body and tail and is known as tomalley, the liver, and has a peppery taste.  This can be used in many recipes.

    It is not recommended to eat the tomalley on a regular basis.  As with other animals, the contaminants oftentimes settle in the liver.  So, it is best to not eat this too often.

    Maine lobsters are delicious and nutritious!  Remember, go light on the butter.  This seafood has less calories, saturated fats, and calories than that of lean beef, pork, or skinless chicken.  Fresh lobster provides a great source of protein and omega-3 fatty acids.  These have shown to reduce hardening of the arteries and the risk of heart disease.
